The Winter winery is located in the idyllic town of Dittelsheim-Hessloch in Rheinhessen, surrounded by numerous vineyards. Particular attention is paid to the Riesling collection, which VINUM Weinguide Deutschland has just highlighted as "impressive with its freshness and precision". The Winter winery was first mentioned in historical records as early as 1469, until detailed records of the winery were made for the first time in 1600. Werner Winter, an ancestor of today's winemaker Stefan Winter, had already planted Riesling and Silvaner. The winery has largely remained true to this line to this day. Around 60% Riesling and 40% Pinot Gris, Pinot Noir, Pinot Blanc and Chardonnay are grown on the 22 existing hectares. Winemaker Stefan Winter gained further notoriety through his membership in the VDP, Maxime Rheinhessen and Message in a Bottle. The philosophy of the winery is to understand viticulture as a winegrower's trade and to work out an individual value from each vineyard. A lot of value is placed on manual work and natural plant protection work without herbicides and synthetic agents in the vineyards. The winery has set itself the goal of a good vineyard, with the cultivation and development of the classic grape varieties Riesling, Chardonnay and the Burgundy varieties. Above all, manual skills and Stefan Winter's formative experiences in the Geh winery play a role. advice dr v. Bassermann-Jordan and Weingut Keller in Dalsheim play a central role. Another important aspect in the cellar of the Winter winery is the gentle processing of the grapes, the spontaneous fermentation and a lot of aging in stainless steel and in the large oak barrels. This preserves the unique style and characteristics of the different vineyards. The Winter winery also has outstanding sparkling wines, which result from the passion for sparkling wines. The Riesling Sekt Brut, which smells of brioche and fully ripe yellow fruits, and the Pure 04|15 - Brut nature, a German Sekt Cuveé, are particularly recommended. The Pure has a blend of vintages 2008, 2013, 2014 and 2015 and aromas of dried apple and subtle brioche notes. In the mouth, it powerfully shows its complexity through a perfect interplay of fruit, minerality and yeasty notes. Due to the Brut-Nature expansion, the sparkling wine cuveé reflects a unique character of the Burgundy grape varieties and its location. In addition, the long yeast storage gives the Pure its fine perlage. A high-quality German sparkling wine that celebrates every festive occasion and especially every turn of the year in a charming and impressive way. In the vineyards of the Winter winery, deep clay marl and loess loam are found, interspersed with weathered limestone. The best-known locations are the Kloppberg, the Geiersberg and the Leckerberg. In the James Suckling rating of the 2019 Kloppberg GG, an outstanding 98 points were achieved. The Pinot Gris from the Winter winery also achieves outstanding ratings in all standard wine guides.
