The fermentation takes place traditionally with the skins to get the colorings
and to leach out the tannin, about 15% of the stems are also fermented
to give the wine a better structure. After five weeks
the young wine is moved into small oak barrels and the acidity is increased
biologically degraded.
Aging takes place in small oak barrels for 18 months,
this allows the wine to reach maturity and stability for bottling. Before
After the filling, the total amount remains for 2 months to be homogenized
in the tank.
The wine is then stored
another 18 months in the cellar of the winery on the bottle.
A dark ruby ​​red in colour, with a scent of lilac and crocus, dark berries
and beets, pickled cherries, beautiful, lingering finish.

The winery is best known for its authentic red wines made from the traditional local varieties Blaufränkisch, Sankt Laurent and Zweigelt.

Josef Umathum also presses fascinating white wines, such as the Pinot gris, the yellow & red Traminer and a very unusual Rosé Saignée, which has written wine history.

The revival of the historical grape variety Lindenblättriger in Burgenland also goes back to Umathum.

The original of the red wine cuvée "Haideboden" was pressed in this house in 1991. The best site wines come from Kirschgarten, Vom Stein and Ried Hallebühl.

Only hand-picked grapes are processed and aged in traditional wooden barrels.

Living soil and alert plants form the basis for the quality of the characterful wines. All works follow the rhythms of nature. In order to preserve the memory of the plants, the vines are only selected from the very oldest vineyards.
