The grapes are harvested exclusively by hand. In the cellar, the wine is given plenty of time to develop its full potential. Umathum's wines are full of character and are considered to be extremely long-lived.

Large old oak barrels are used for the development of the "classic wines". These barrels do not give off any oak aromas, but give the wine its very own aura. The "wine cathedral" forms the heart of the winery, where the best single-vineyard wines mature for up to two years. and then wait another two years in the temperature-controlled bottle storage until they are ready to drink.

The work in the vineyard and cellar follows the rhythms of nature, the focus is on a living soil and rich biodiversity. About 2/3 of the vineyard area is planted with red wine varieties, regional varieties and selections that have adapted to the climate and management conditions over many decades form the focus, alongside historical vines such as the "Lindenblättrige" and fungus-resistant vines are grown best-known vineyard wines are Ried Hallebühl", "Haideboden", "Vom Stein". You are on the barren pebble soil on the east side of Lake Neusiedl around Frauenkirchen.

On the northwest side, in the Leithagebirge, slate and shell limestone soils are cultivated. The top wines from these sites are called "Ried Kirchberg" in Winden and "Kirschgarten" in Jois, where the only stone terraces in Burgenland are located. The interaction of nature and technology to conserve natural resources and increase quality is the challenge of the 21st century.

With the company's photovoltaic systems, the winery generates more than twice as much energy as it consumes on an annual average. Rethinking is not only the requirement of our time, but also the initiative that the winery created to promote rural areas. Impulse events, lectures, discussions and concerts take place regularly at the Umathum winery.
